  • King oyster mushrooms - 150 grams
  • Garlic - 4 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Soy sauce - 3 tablespoons
  • Vegetable broth - 200 ml
  • Rice vinegar - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Sugar - 1 teaspoon
  • Green onions - 2 stalks, chopped
  • Cilantro - for garnish
  • Cornstarch - 1 tablespoon
  • Water - 2 tablespoons

Steps

  1. Clean the shiitake and king oyster mushrooms, then slice them into bite-sized pieces.
  2. In a medium bowl, mix the cornstarch with 2 tablespoons of water to create a slurry and set aside.
  3. Heat a non-stick pan over medium heat and add the sesame oil. Sauté the minced garlic and ginger for about 1 minute until fragrant.
  4. Add the sliced mushrooms to the pan and stir-fry for about 5 minutes until they begin to soften.
  5. Pour in the soy sauce, vegetable broth, rice vinegar, and sugar. Stir well to combine all the ingredients.
  6. Reduce the heat to low and let the mixture simmer for 15 minutes, allowing the flavors to meld together.
  7. Add the cornstarch slurry to the pan and stir until the sauce thickens, about 2-3 minutes.
  8. Remove from heat and garnish with chopped green onions and cilantro before serving.
