Ingredients

  • All-purpose flour - 250 grams
  • Active dry yeast - 7 grams
  • Sugar - 15 grams
  • Warm water - 150 ml
  • Salt - 5 grams
  • Vegetable oil - 15 ml
  • Jackfruit (canned, in water) - 200 grams
  • Soy sauce - 30 ml
  • Hoisin sauce - 30 grams
  • Rice vinegar - 10 ml
  • Five-spice powder - 5 grams
  • Garlic (minced) - 2 cloves
  • Ginger (minced) - 1 teaspoon
  • Green onions (chopped) - 2 tablespoons
  • Sesame oil - 5 ml

Steps

  1. In a bowl, combine warm water, sugar, and yeast. Let it sit for about 10 minutes until frothy.
  2. In a separate bowl, mix the flour and salt. Once the yeast mixture is ready, add it along with vegetable oil to the flour mixture.
  3. Knead the dough on a floured surface for about 10 minutes until smooth. Place it in a greased bowl, cover, and let it rise for about 1 hour or until doubled in size.
  4. While the dough is rising, prepare the filling. Drain and rinse the jackfruit, then shred it using forks or your hands.
  5. In a skillet over medium heat, add garlic and ginger, sauté for 1-2 minutes until fragrant. Then add the shredded jackfruit, soy sauce, hoisin sauce, rice vinegar, five-spice powder, and sesame oil. Cook for about 10-15 minutes, stirring occasionally, until the jackfruit is well coated and cooked through. Stir in chopped green onions.
  6. Once the dough has risen, punch it down and divide it into 6 equal pieces. Roll each piece into a ball, then flatten it into a circle about 10 cm in diameter.
  7. Place about 1-2 tablespoons of the jackfruit filling in the center of each circle. Gather the edges of the dough and pinch them together to seal the bun.
  8. Place the buns on parchment paper squares in a steamer basket, cover, and let them rise for another 30 minutes.
  9. Steam the buns for about 15 minutes until fluffy and cooked through. Serve warm.
