Ingredients

  • All-purpose flour - 250 grams
  • Active dry yeast - 5 grams
  • Sugar - 10 grams
  • Warm water - 150 milliliters
  • Olive oil - 15 milliliters
  • Salt - 5 grams
  • Firm tofu - 100 grams, crumbled
  • Shiitake mushrooms - 100 grams, diced
  • Carrot - 50 grams, finely chopped
  • Green onions - 2, finely chopped
  • Soy sauce - 15 milliliters
  • Sesame oil - 5 milliliters
  • Garlic - 1 clove, minced
  • Ginger - 1 teaspoon, grated

Steps

  1. In a small bowl, combine warm water, sugar, and yeast. Let it sit for 5-10 minutes until frothy.
  2. In a large mixing bowl, combine flour and salt. Add the yeast mixture and olive oil. Mix until a dough forms.
  3. Knead the dough on a lightly floured surface for 5-7 minutes until smooth. Place it in a greased bowl, cover with a damp cloth, and let rise for 30 minutes in a warm place.
  4. While the dough is rising, prepare the filling. In a skillet, heat a little oil over medium heat, add garlic, ginger, and sauté for 1 minute.
  5. Add diced shiitake mushrooms, crumbled tofu, carrot, and green onions to the skillet. Stir in soy sauce and sesame oil, cooking for 5-7 minutes until the vegetables are tender. Remove from heat and let cool.
  6. After the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a circle about 10 cm in diameter.
  7. Place a spoonful of the filling in the center of each circle. Gather the edges of the dough and pinch to seal the bun tightly.
  8. Place the filled buns on a parchment-lined steamer basket, ensuring they have space to expand. Cover and let them rise for another 15 minutes.
  9. Bring water to a boil in a pot and place the steamer basket over it. Steam the buns for 15 minutes, then remove from heat.
  10. Serve the Vegan Baozi warm with soy sauce or a dipping sauce of your choice.
