  • All-purpose flour - 200 grams
  • Active dry yeast - 5 grams
  • Sugar - 10 grams
  • Warm water - 120 milliliters
  • Salt - 3 grams
  • Vegetable oil - 15 milliliters
  • Mushrooms (shiitake or button) - 100 grams, chopped
  • Carrot - 50 grams, grated
  • Red bell pepper - 50 grams, diced
  • Soy sauce - 15 milliliters
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Green onions - 2, chopped
  • Sesame oil - 5 milliliters

Steps

  1. In a bowl, mix warm water, sugar, and yeast. Let it sit for about 5 minutes until frothy.
  2. In another bowl, combine flour and salt. Create a well in the center, then add the yeast mixture and vegetable oil.
  3. Knead the dough for about 10 minutes until smooth. Place in a greased bowl, cover with a damp cloth, and let it rise for 30 minutes or until doubled in size.
  4. While the dough is rising, prepare the filling: heat a pan over medium heat, add a bit of vegetable oil, and sauté garlic and ginger for 1 minute.
  5. Add chopped mushrooms, carrot, and red bell pepper to the pan, stirring for about 5-7 minutes until tender. Stir in soy sauce, green onions, and sesame oil, then remove from heat.
  6. Once the dough has risen, punch it down and divide it into 6 equal pieces. Roll each piece into a small ball and flatten it into a disc.
  7. Place about 1-2 tablespoons of the filling in the center of each disc. Gather the edges and pinch them together to seal the bun.
  8. Place the buns on parchment paper squares in a steamer basket, ensuring they are not touching. Cover and let rise for another 15 minutes.
  9. Steam the buns over boiling water for 10-12 minutes until fluffy and cooked through. Serve warm.
