  • Ripe tomatoes - 400 grams
  • Vegetable broth - 500 ml
  • Garlic - 2 cloves
  • Ginger - 1 teaspoon, grated
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 teaspoon
  • Green onions - 2, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Cilantro - for garnish

Steps

  1. Begin by pressing the firm tofu to remove excess moisture. Cut the tofu into bite-sized cubes.
  2. In a pot, heat the sesame oil over medium heat. Add minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
  3. Chop the ripe tomatoes into small pieces and add them to the pot. Cook for 5-7 minutes, stirring occasionally, until the tomatoes soften and release their juices.
  4. Pour in the vegetable broth and bring the mixture to a gentle boil. Add the soy sauce, salt, and black pepper to taste.
  5. Carefully add the tofu cubes to the pot and simmer for another 10 minutes, allowing the flavors to meld together.
  6. Stir in the chopped green onions just before serving for a fresh kick.
  7. Ladle the soup into bowls and garnish with fresh cilantro. Serve hot.
