Ingredients

  • Jasmine rice - 150 grams
  • Ripe tomatoes - 300 grams, chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Green onions - 2, chopped
  • Vegetable broth - 400 milliliters
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Cilantro - for garnish

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then soak it for 15 minutes.
  2. In a medium saucepan, heat the sesame oil over medium heat and sauté the minced garlic and ginger until fragrant, about 1 minute.
  3. Add the chopped tomatoes to the saucepan and cook for 5-7 minutes until they soften and release their juices.
  4. Stir in the soaked rice, vegetable broth, soy sauce, salt, and black pepper. Bring the mixture to a boil.
  5. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 15-20 minutes, or until the rice is cooked and has absorbed all the liquid.
  6. Remove from heat and let it sit for 5 minutes before fluffing with a fork. Stir in the chopped green onions.
  7. Serve hot, garnished with fresh cilantro.
