- Vegetable broth - 400 milliliters
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Cilantro - for garnish
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then soak it for 15 minutes.
- In a medium saucepan, heat the sesame oil over medium heat and sauté the minced garlic and ginger until fragrant, about 1 minute.
- Add the chopped tomatoes to the saucepan and cook for 5-7 minutes until they soften and release their juices.
- Stir in the soaked rice, vegetable broth, soy sauce, salt, and black pepper. Bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 15-20 minutes, or until the rice is cooked and has absorbed all the liquid.
- Remove from heat and let it sit for 5 minutes before fluffing with a fork. Stir in the chopped green onions.
