Ingredients

  • Galangal - 20 grams, sliced
  • Kaffir lime leaves - 4 leaves, torn
  • Thai bird's eye chili - 2, smashed
  • Mushrooms - 100 grams, sliced
  • Shrimp - 200 grams, peeled and deveined
  • Fish sauce - 2 tablespoons
  • Lime juice - 2 tablespoons
  • Cilantro - a handful, chopped
  • Green onion - 2, sliced
  • Tomato - 1 medium, diced

Steps

  1. In a pot, bring 500 ml of water to a boil.
  2. Add the chopped lemongrass, sliced galangal, torn kaffir lime leaves, and smashed bird's eye chili to the boiling water.
  3. Reduce the heat and let the broth simmer for about 10 minutes to allow the flavors to infuse.
  4. Add the sliced mushrooms and diced tomato to the pot, cooking for an additional 5 minutes.
  5. Stir in the shrimp and cook until they turn pink and opaque, about 3-4 minutes.
  6. Add the fish sauce and lime juice, stirring to combine.
  7. Remove from heat and garnish with chopped cilantro and sliced green onion before serving.
