- Firm tofu - 300 grams
- Fermented black beans - 2 tablespoons
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, minced
- Bell pepper (red or green) - 1 medium, sliced
- Onion - 1 medium, sliced
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Cornstarch - 1 tablespoon
- Water - 100 ml
- Spring onions - 2, chopped for garnish
- Fresh cilantro - a handful, for garnish
Steps
- Press the tofu for 15 minutes to remove excess moisture, then cut it into 1-inch cubes.
- In a bowl, mix the cornstarch with a pinch of salt and toss the tofu cubes until well-coated.
- Heat vegetable oil in a large skillet or wok over medium-high heat. Add the tofu and fry until golden brown on all sides, about 5-7 minutes. Remove the tofu and set aside.
- In the same skillet, add minced garlic and ginger, stir-frying for about 30 seconds until fragrant.
- Add sliced onion and bell pepper to the skillet, cooking for 3-4 minutes until they begin to soften.
- Stir in the fermented black beans, soy sauce, sesame oil, and water. Bring the mixture to a simmer.
- Return the fried tofu to the skillet, gently stirring to coat it in the sauce. Cook for another 3-4 minutes until heated through.
- Serve hot, garnished with chopped spring onions and fresh cilantro.
