- Firm tofu - 300 grams
- Bell pepper (mixed colors) - 1 cup, diced
- Pineapple chunks (fresh or canned) - 1 cup
- Carrot - 1 medium, julienned
- Green onion - 2, chopped
- Garlic - 2 cloves, minced
- Ginger - 1 tsp, grated
- Soy sauce - 2 tbsp
- Rice vinegar - 2 tbsp
- Ketchup - 2 tbsp
- Brown sugar - 1 tbsp
- Cornstarch - 1 tbsp
- Vegetable oil - 2 tbsp
- Sesame oil - 1 tsp
- Salt - to taste
- Black pepper - to taste
Steps
- Press the tofu for 15 minutes to remove excess moisture, then cut it into cubes.
- In a bowl, mix soy sauce, rice vinegar, ketchup, brown sugar, and cornstarch to create the sweet and sour sauce.
- Heat vegetable oil in a pan over medium heat. Add tofu cubes and fry until golden brown on all sides, about 8-10 minutes.
- Remove the tofu from the pan and set aside. In the same pan, add garlic, ginger, bell peppers, and carrot. Sauté for 5 minutes until slightly softened.
- Add pineapple chunks and the sweet and sour sauce to the pan. Stir well and let it simmer for another 3-4 minutes until the sauce thickens.
- Return the fried tofu to the pan and gently toss to coat with the sauce. Cook for an additional 2 minutes.
- Garnish with chopped green onions, sesame oil, and season with salt and black pepper to taste. Serve hot.
