- Sesame Oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Cornstarch - 2 tablespoons
- Bell Pepper - 1 medium, cut into 1-inch pieces
- Zucchini - 1 medium, sliced into 1-inch rounds
- Cherry Tomatoes - 10 pieces
- Skewers - 4 (soaked in water for 30 minutes if wooden)
Steps
- Press the firm tofu for 15 minutes to remove excess water, then cut it into 1-inch cubes.
- In a mixing bowl, combine soy sauce, sesame oil, minced garlic, and grated ginger to create the marinade.

- In a separate bowl, toss the bell pepper, zucchini, and cherry tomatoes with a pinch of salt and pepper.
- Preheat the grill or grill pan over medium-high heat.
- Once marinated, take the tofu cubes and toss them in cornstarch for a crispy texture.
- Assemble the skewers by alternating tofu, bell pepper, zucchini, and cherry tomatoes.
- Grill the skewers for about 10-12 minutes, turning occasionally until the tofu is golden and the vegetables are tender.
- Serve the skewers hot with additional soy sauce or a dipping sauce of your choice.
