Ingredients

  • Firm Tofu - 300 grams

  • Cornstarch - 2 tablespoons
  • Bell Pepper - 1 medium, cut into 1-inch pieces
  • Zucchini - 1 medium, sliced into 1-inch rounds
  • Cherry Tomatoes - 10 pieces
  • Skewers - 4 (soaked in water for 30 minutes if wooden)

Steps

  1. Press the firm tofu for 15 minutes to remove excess water, then cut it into 1-inch cubes.
  2. In a mixing bowl, combine soy sauce, sesame oil, minced garlic, and grated ginger to create the marinade.
  3. Add the tofu cubes to the marinade, ensuring they are well coated. Let it marinate for at least 15 minutes.
  4. In a separate bowl, toss the bell pepper, zucchini, and cherry tomatoes with a pinch of salt and pepper.
  5. Preheat the grill or grill pan over medium-high heat.
  6. Once marinated, take the tofu cubes and toss them in cornstarch for a crispy texture.
  7. Assemble the skewers by alternating tofu, bell pepper, zucchini, and cherry tomatoes.
  8. Grill the skewers for about 10-12 minutes, turning occasionally until the tofu is golden and the vegetables are tender.
