  • Fresh cilantro - 2 tablespoons, chopped
  • Garlic - 1 clove, minced
  • Soy sauce - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Black sesame seeds - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Begin by draining the silken tofu and gently patting it dry with a paper towel. Cut it into bite-sized cubes.
  2. Wash the tomatoes and cucumber. Dice the tomatoes and slice the cucumber into thin rounds.
  3. In a mixing bowl, combine the cubed tofu, diced tomatoes, cucumber slices, and chopped cilantro.
  4. In a separate small bowl, whisk together the minced garlic, soy sauce, rice vinegar, sesame oil, salt, and black pepper to create the dressing.
