Ingredients

  • Gluten-free pizza crust - 1 small (about 200g)
  • Yak cheese, grated - 100g
  • Tomato sauce - 100g
  • Bell pepper, thinly sliced - 1/2 medium
  • Red onion, thinly sliced - 1/4 medium
  • Fresh spinach - 50g
  • Garlic, minced - 1 clove
  • Olive oil - 1 tablespoon
  • Cumin powder - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - to taste
  • Fresh cilantro, chopped - for garnish

Steps

  1. Preheat your oven to 220°C (428°F).
  2. In a skillet, heat olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
  3. Add the sliced bell pepper and red onion to the skillet, cooking until they are just tender, about 3-4 minutes.
  4. Remove from heat and add the fresh spinach, cumin, black pepper, and salt, stirring until the spinach wilts.
  5. Place the gluten-free pizza crust on a baking sheet or pizza stone.
  6. Spread the tomato sauce evenly over the crust.
  7. Sprinkle half of the grated yak cheese over the sauce.
  8. Layer the sautéed vegetable mixture on top of the cheese.
  9. Finish by adding the remaining yak cheese on top of the vegetables.
  10. Bake in the preheated oven for 12-15 minutes or until the cheese is melted and bubbling.
