Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 125 milliliters
  • Active dry yeast - 5 grams
  • Sugar - 10 grams
  • Salt - 2 grams
  • Ground pork - 100 grams
  • Shiitake mushrooms (dried) - 20 grams
  • Cabbage (finely chopped) - 50 grams
  • Carrot (finely grated) - 30 grams
  • Ginger (minced) - 5 grams
  • Garlic (minced) - 5 grams
  • Soy sauce - 15 milliliters
  • Sesame oil - 5 milliliters
  • Green onions (finely chopped) - 10 grams

Steps

  1. In a small bowl, dissolve the sugar and yeast in warm water and let it sit for about 10 minutes until it becomes frothy.
  2. In a large mixing bowl, combine the all-purpose flour and salt. Gradually add the yeast mixture and knead until you form a smooth dough. Cover and let it rise in a warm place for 30 minutes.
  3. Soak the dried shiitake mushrooms in warm water for about 20 minutes, then drain and finely chop them.
  4. In a bowl, mix the ground pork, chopped mushrooms, cabbage, grated carrot, minced ginger, minced garlic, soy sauce, sesame oil, and green onions until well combined.
  5. Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a small circle about 10 cm in diameter.
  6. Place a tablespoon of the filling in the center of each dough circle. Gather the edges of the dough and pinch them together to seal the bun.
  7. Place the buns on a piece of parchment paper and let them rest for another 10 minutes.
  8. Steam the buns in a steamer basket over boiling water for 15 minutes. Serve hot.
