Ingredients

  • Fresh clams - 400 grams
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Soy sauce (gluten-free) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Chili paste - 1 teaspoon
  • Spring onions - 2, finely chopped
  • Cilantro - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Black pepper - 1/2 teaspoon
  • Sugar - 1 teaspoon
  • Olive oil - 1 tablespoon

Steps

  1. Rinse the clams under cold water to remove any sand or grit. Discard any clams that are open and do not close when tapped.
  2. In a bowl, combine minced garlic, grated ginger, gluten-free soy sauce, sesame oil, chili paste, spring onions, cilantro, lemon juice, black pepper, and sugar. Mix well to create the marinade.
  3. Add the cleaned clams to the marinade, making sure they are well coated. Let them marinate for 15 minutes.
  4. Preheat your grill or barbecue to medium-high heat.
  5. Drizzle olive oil over the grill grates to prevent sticking. Using tongs, place the marinated clams on the grill.
  6. Grill the clams for about 5-7 minutes, or until they open up. Discard any clams that remain closed after cooking.
  7. Remove the clams from the grill, and drizzle with any leftover marinade. Serve hot, garnished with extra chopped cilantro and spring onions.
