Ingredients

  • Chicken thighs, boneless - 300 grams
  • Soy sauce - 60 ml
  • Sesame oil - 30 ml
  • Chinese rice wine (Shaoxing) - 30 ml
  • Garlic, minced - 4 cloves
  • Ginger, sliced - 10 grams
  • Scallions, chopped - 2 stalks
  • Red chili, sliced - 1 (optional)
  • Basil leaves - 10 grams
  • Jasmine rice - 150 grams
  • Water - 300 ml

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then soak it for 20 minutes.
  2. In a bowl, mix the soy sauce, sesame oil, and rice wine. Add the minced garlic and sliced ginger, and stir to combine.
  3. Cut the chicken thighs into bite-sized pieces and marinate them in the sauce mixture for at least 10 minutes.
  4. In a medium saucepan, bring 300 ml of water to a boil. Drain the soaked rice and add it to the boiling water. Reduce the heat to low, cover, and simmer for 15 minutes until the rice is cooked and the water is absorbed.
  5. While the rice is cooking, heat a wok or large skillet over medium-high heat. Add the marinated chicken along with the marinade and sauté for about 7-10 minutes until the chicken is cooked through.
  6. Add the chopped scallions and sliced red chili (if using) to the chicken and stir-fry for another 2 minutes.
  7. Remove from heat and stir in the fresh basil leaves.
  8. Serve the chicken mixture over the cooked jasmine rice.
