Ingredients

  • Chicken breast - 300 grams, diced
  • Cauliflower - 400 grams, riced
  • Thai basil leaves - 30 grams, roughly chopped
  • Garlic - 3 cloves, minced
  • Shallot - 1 medium, finely sliced
  • Soy sauce - 2 tablespoons
  • Oyster sauce - 1 tablespoon
  • Fish sauce - 1 teaspoon
  • Brown sugar substitute - 1 teaspoon
  • Vegetable oil - 2 tablespoons
  • Red chili - 1, sliced (optional for heat)
  • Pepper - to taste

Steps

  1. Prepare the cauliflower rice by grating the cauliflower or using a food processor to achieve a rice-like texture.
  2. Heat 1 tablespoon of vegetable oil in a large skillet over medium heat. Add the riced cauliflower and sauté for 5-7 minutes until tender. Season with salt and pepper, then set aside.
  3. In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and sliced shallot, and sauté for 1-2 minutes until fragrant.

  5. Add the soy sauce, oyster sauce, fish sauce, and brown sugar substitute to the skillet, stirring to combine. Cook for an additional 2 minutes.
  6. Stir in the chopped Thai basil and sliced red chili (if using) and cook for another minute until the basil is wilted.
  7. Serve the Thai basil chicken over the cauliflower rice, garnished with additional basil if desired.
