- Chicken breast - 300 grams, diced
- Cauliflower - 400 grams, riced
- Thai basil leaves - 30 grams, roughly chopped
- Garlic - 3 cloves, minced
- Shallot - 1 medium, finely sliced
- Soy sauce - 2 tablespoons
- Oyster sauce - 1 tablespoon
- Fish sauce - 1 teaspoon
- Brown sugar substitute - 1 teaspoon
- Vegetable oil - 2 tablespoons
- Red chili - 1, sliced (optional for heat)
- Pepper - to taste
Steps
- Prepare the cauliflower rice by grating the cauliflower or using a food processor to achieve a rice-like texture.
- Heat 1 tablespoon of vegetable oil in a large skillet over medium heat. Add the riced cauliflower and sauté for 5-7 minutes until tender. Season with salt and pepper, then set aside.
- In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and sliced shallot, and sauté for 1-2 minutes until fragrant.
- Increase the heat to high and add the diced chicken. Stir-fry for about 5-7 minutes until the chicken is cooked through and no longer pink.
- Add the soy sauce, oyster sauce, fish sauce, and brown sugar substitute to the skillet, stirring to combine. Cook for an additional 2 minutes.
- Stir in the chopped Thai basil and sliced red chili (if using) and cook for another minute until the basil is wilted.
- Serve the Thai basil chicken over the cauliflower rice, garnished with additional basil if desired.
