Ingredients

  • Portobello mushrooms - 4 large
  • Soy sauce - 60 ml
  • Mirin - 30 ml
  • Brown sugar - 15 g
  • Garlic - 2 cloves, minced
  • Ginger - 1 tsp, grated
  • Sesame oil - 1 tsp
  • Green onions - 2, sliced
  • Sesame seeds - 1 tbsp (for garnish)
  • Vegetable oil - 1 tbsp (for grilling)

Steps

  1. In a bowl, combine soy sauce, mirin, brown sugar, minced garlic, grated ginger, and sesame oil to create the teriyaki marinade.
  2. Clean the portobello mushrooms with a damp cloth and remove the stems.
  3. Place the mushrooms in the marinade, ensuring they are well coated. Let them marinate for at least 15 minutes.
  4. Preheat a grill or grill pan over medium heat and brush it with vegetable oil.
  5. Remove the mushrooms from the marinade, allowing excess marinade to drip off, and place them on the grill.
  6. Grill the mushrooms for about 5-7 minutes on each side, basting occasionally with the remaining marinade until they are tender and have nice grill marks.
  7. Once grilled, remove the mushrooms from the heat and let them rest for a couple of minutes.
  8. Slice the grilled portobello mushrooms and serve them garnished with sliced green onions and sesame seeds.
