Ingredients

  • Chicken thighs - 400 grams
  • Soy sauce (or tamari for gluten-free) - 60 ml
  • Rice vinegar - 15 ml
  • Sesame oil - 10 ml
  • Erythritol (or other keto sweetener) - 20 grams
  • Garlic, minced - 2 cloves
  • Ginger, grated - 1 teaspoon
  • Green onions, sliced - 2 stalks
  • Sesame seeds - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a bowl, whisk together soy sauce, rice vinegar, sesame oil, erythritol, minced garlic, grated ginger, salt, and black pepper to create the teriyaki marinade.
  2. Place the chicken thighs in a resealable plastic bag or a shallow dish and pour the marinade over them. Seal or cover and marinate in the refrigerator for at least 15 minutes, or up to 2 hours for more flavor.
  3. Preheat a grill or skillet over medium-high heat. Remove the chicken from the marinade, allowing excess marinade to drip off, and discard the marinade.
  4. Cook the chicken thighs for about 6-7 minutes on each side, or until they reach an internal temperature of 75°C (165°F) and are nicely caramelized.
  5. Once cooked, remove the chicken from heat and let it rest for a few minutes. Slice the chicken and sprinkle with sesame seeds and sliced green onions before serving.
