Ingredients
- Chicken thighs - 400 grams
- Soy sauce (or tamari for gluten-free) - 60 ml
- Rice vinegar - 15 ml
- Sesame oil - 10 ml
- Erythritol (or other keto sweetener) - 20 grams
- Garlic, minced - 2 cloves
- Ginger, grated - 1 teaspoon
- Green onions, sliced - 2 stalks
- Sesame seeds - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- In a bowl, whisk together soy sauce, rice vinegar, sesame oil, erythritol, minced garlic, grated ginger, salt, and black pepper to create the teriyaki marinade.
- Place the chicken thighs in a resealable plastic bag or a shallow dish and pour the marinade over them. Seal or cover and marinate in the refrigerator for at least 15 minutes, or up to 2 hours for more flavor.
- Preheat a grill or skillet over medium-high heat. Remove the chicken from the marinade, allowing excess marinade to drip off, and discard the marinade.
- Cook the chicken thighs for about 6-7 minutes on each side, or until they reach an internal temperature of 75°C (165°F) and are nicely caramelized.
- Once cooked, remove the chicken from heat and let it rest for a few minutes. Slice the chicken and sprinkle with sesame seeds and sliced green onions before serving.
