Ingredients

  • Cauliflower - 1 medium head, cut into florets
  • Soy sauce - 60 ml
  • Maple syrup - 30 ml
  • Rice vinegar - 15 ml
  • Sesame oil - 10 ml
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Cornstarch - 1 tablespoon
  • Water - 60 ml
  • Green onions - 2, sliced (for garnish)
  • Sesame seeds - 1 tablespoon (for garnish)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a small saucepan, combine soy sauce, maple syrup, rice vinegar, sesame oil, minced garlic, and grated ginger. Bring to a simmer over medium heat.
  3. In a small bowl, mix cornstarch with water until smooth, then add to the simmering sauce. Stir until the sauce thickens, about 2-3 minutes. Remove from heat.
  4. Spread the cauliflower florets evenly on a baking sheet lined with parchment paper. Drizzle half of the teriyaki sauce over the cauliflower, tossing to coat.
  5. Roast the cauliflower in the preheated oven for 20 minutes, stirring halfway through.
  6. Remove the cauliflower from the oven and drizzle the remaining teriyaki sauce over the top. Toss to coat again.
  7. Return to the oven for an additional 5 minutes.
  8. Serve hot, garnished with sliced green onions and sesame seeds.
