Ingredients

  • Beef sirloin - 300 grams, cut into 2.5 cm cubes
  • Soy sauce - 60 ml
  • Mirin - 30 ml
  • Honey - 1 tablespoon (15 grams)
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Sesame oil - 1 teaspoon
  • Green onions - 2, chopped
  • Red bell pepper - 1, cut into 2.5 cm pieces
  • Zucchini - 1, cut into 2.5 cm pieces
  • Wooden skewers - 4, soaked in water for 30 minutes

Steps

  1. In a mixing bowl, combine soy sauce, mirin, honey, minced garlic, grated ginger, and sesame oil to create the teriyaki marinade.
  2. Add the beef cubes to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 15 minutes to allow the flavors to infuse.
  3. While the beef is marinating, prepare the vegetables by cutting the red bell pepper and zucchini into 2.5 cm pieces.
  4. Preheat a grill or grill pan over medium-high heat.
  5. Thread the marinated beef, red bell pepper, and zucchini onto the soaked skewers, alternating between beef and vegetables.
  6. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the beef is cooked to your desired doneness and has nice grill marks.
  7. Remove from the grill and sprinkle with chopped green onions before serving.
