- Jasmine rice - 150 grams
- Water - 250 ml
- Black tea leaves - 2 tablespoons
- Cinnamon stick - 1
- Star anise - 1
- Light soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Green onions - 2, chopped
- Salt - to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then drain.
- In a medium saucepan, combine the rinsed rice and 250 ml of water. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-18 minutes or until the rice is tender and the water is absorbed.
- While the rice is cooking, prepare the smoking mixture. In a small bowl, combine the black tea leaves, cinnamon stick, and star anise.
- Once the rice is cooked, transfer it to a heatproof bowl and set aside.
- In a wok or large pan, heat the sesame oil over medium heat. Add the tea mixture and stir-fry for 1-2 minutes to release the aromas.
- Place the bowl of rice on a steaming rack or heatproof dish in the wok, ensuring it doesn't touch the tea mixture. Cover the wok tightly with a lid and reduce the heat to low.
- Smoke the rice for about 10 minutes, allowing the flavors to infuse. Remove from heat and let it sit, covered, for an additional 5 minutes.
- Fluff the rice with a fork, then drizzle with light soy sauce and add salt to taste. Garnish with chopped green onions before serving.
