Ingredients

  • 4 large eggs
  • 2 tablespoons soy sauce
  • 1 tablespoon Chinese five-spice powder
  • 1 tablespoon black tea leaves (or tea bags)
  • 1 tablespoon uncooked rice
  • 1 teaspoon salt
  • 1 teaspoon water

Steps

  1. In a saucepan, place the eggs and cover with cold water. Bring to a boil over medium heat.
  2. Once boiling, cover the saucepan, remove from heat, and let the eggs sit for 12 minutes.
  3. After 12 minutes, transfer the eggs to an ice bath for 5 minutes to cool and stop the cooking process.
  4. Gently tap the eggs on the counter to crack the shells all over without removing them.
  5. In a small bowl, mix the soy sauce, five-spice powder, salt, and 1 teaspoon of water.
  6. In a wok or a deep pan, add the rice, black tea leaves, and the soy sauce mixture. Stir to combine.
  7. Place a rack or steamer basket above the mixture in the wok, and arrange the cracked eggs on the rack.
  8. Cover the wok with a lid and heat over medium heat for about 10 minutes to smoke the eggs.
  9. Remove from heat and let the eggs cool in the smoker for an additional 5 minutes.
  10. Peel the eggs and serve them sliced or whole, garnished with chopped green onions if desired.
