Ingredients
- 4 large eggs
- 2 tablespoons soy sauce
- 1 tablespoon Chinese five-spice powder
- 1 tablespoon black tea leaves (or tea bags)
- 1 tablespoon uncooked rice
- 1 teaspoon salt
- 1 teaspoon water
Steps
- In a saucepan, place the eggs and cover with cold water. Bring to a boil over medium heat.
- Once boiling, cover the saucepan, remove from heat, and let the eggs sit for 12 minutes.
- After 12 minutes, transfer the eggs to an ice bath for 5 minutes to cool and stop the cooking process.
- Gently tap the eggs on the counter to crack the shells all over without removing them.
- In a small bowl, mix the soy sauce, five-spice powder, salt, and 1 teaspoon of water.
- In a wok or a deep pan, add the rice, black tea leaves, and the soy sauce mixture. Stir to combine.
- Place a rack or steamer basket above the mixture in the wok, and arrange the cracked eggs on the rack.
- Cover the wok with a lid and heat over medium heat for about 10 minutes to smoke the eggs.
- Remove from heat and let the eggs cool in the smoker for an additional 5 minutes.
- Peel the eggs and serve them sliced or whole, garnished with chopped green onions if desired.
