- Whole wheat pizza base - 2 pieces (200 grams total)
- Low-fat mozzarella cheese - 100 grams, shredded
- Red bell pepper - 1 medium, sliced
- Green onions - 2, chopped
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Fresh cilantro - for garnish
Steps
- Prepare the tea smoke mixture by combining the black tea leaves, jasmine rice, and sugar in a small bowl.
- In a wok or deep pan, heat a small amount of oil over medium heat and add the tea smoke mixture to the bottom, then place a steaming rack over it.
- Score the skin of the duck breast and season with soy sauce and sesame oil. Place the duck breast skin-side up on the rack.
- Cover the wok and smoke the duck for about 15-20 minutes until cooked to your liking. Remove and let it rest for 5 minutes before slicing.
- Preheat the oven to 220°C (428°F).
