  • Duck breast - 200 grams
  • Chinese black tea leaves - 2 tablespoons
  • Jasmine rice - 2 tablespoons
  • Sugar - 1 tablespoon
  • Whole wheat pizza base - 2 pieces (200 grams total)
  • Low-fat mozzarella cheese - 100 grams, shredded
  • Red bell pepper - 1 medium, sliced
  • Green onions - 2, chopped
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Fresh cilantro - for garnish

Steps

  1. Prepare the tea smoke mixture by combining the black tea leaves, jasmine rice, and sugar in a small bowl.
  2. In a wok or deep pan, heat a small amount of oil over medium heat and add the tea smoke mixture to the bottom, then place a steaming rack over it.
  3. Score the skin of the duck breast and season with soy sauce and sesame oil. Place the duck breast skin-side up on the rack.
  4. Cover the wok and smoke the duck for about 15-20 minutes until cooked to your liking. Remove and let it rest for 5 minutes before slicing.
  5. Preheat the oven to 220°C (428°F).
  6. Spread the shredded mozzarella cheese evenly over the pizza bases.
  7. Top with sliced smoked duck, red bell pepper, and chopped green onions.
  8. Bake in the preheated oven for about 10-12 minutes or until the cheese is melted and bubbly.
  9. Remove from the oven and garnish with fresh cilantro before slicing.
