Ingredients

  • Duck breast - 2 pieces (about 200g each)
  • Black tea leaves - 2 tablespoons
  • Rice - 1/2 cup
  • Brown sugar - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Ginger - 1 tablespoon, grated
  • Garlic - 1 clove, minced
  • Burger buns - 2 pieces
  • Cabbage - 1 cup, shredded
  • Carrot - 1 medium, julienned
  • Coriander - 1 tablespoon, chopped
  • Lime - 1, juiced
  • Sesame oil - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Prepare the tea smoking mixture by combining black tea leaves, rice, and brown sugar in a small bowl.
  2. Place the duck breasts skin-side down in a shallow dish and rub with soy sauce, grated ginger, minced garlic, salt, and pepper. Let marinate for at least 20 minutes.
  3. In a wok or a heavy skillet, add the tea smoking mixture and heat over medium heat until it starts to smoke.
  4. Place a rack over the smoking mixture and lay the marinated duck breasts on the rack, skin-side up. Cover tightly with a lid or aluminum foil and smoke for about 15-20 minutes.
  5. Once smoked, remove the duck breasts and let them rest for 5 minutes before slicing them thinly.
  6. In a bowl, mix the shredded cabbage, julienned carrot, chopped coriander, lime juice, sesame oil, and a pinch of salt to create the slaw.
