Ingredients

  • Duck breast - 2 pieces (about 300g each)
  • Green tea leaves - 2 tablespoons
  • Jasmine rice - 1/2 cup
  • Brown sugar - 1 tablespoon
  • Star anise - 2 pieces
  • Cinnamon stick - 1 piece
  • Soy sauce - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Ginger - 1 teaspoon, grated
  • Garlic - 2 cloves, minced
  • Spring onions - 2, chopped
  • Sesame oil - 1 teaspoon
  • Salt - to taste

Steps

  1. Score the skin of the duck breast in a crisscross pattern, being careful not to cut into the meat.
  2. In a bowl, mix soy sauce, rice vinegar, ginger, garlic, and salt. Marinate the duck breasts in this mixture for at least 30 minutes.
  3. Prepare the smoking mixture by combining green tea leaves, jasmine rice, brown sugar, star anise, and a cinnamon stick in a small bowl.
  4. In a wok or a deep pot, place a steaming rack above the smoking mixture and bring it to medium heat.
  5. Once the smoking mixture begins to smoke, place the marinated duck breasts on the rack, skin side up, and cover with a lid.
  6. Smoke the duck for about 15-20 minutes for medium doneness. Remove from heat and let it rest for 10 minutes.
  7. Meanwhile, cook jasmine rice according to package instructions.
  8. Slice the smoked duck and serve it over a bed of jasmine rice, garnished with chopped spring onions and drizzled with sesame oil.
