- Ginger - 1 teaspoon, grated
- Garlic - 2 cloves, minced
- Spring onions - 2, chopped
- Sesame oil - 1 teaspoon

Steps
- Score the skin of the duck breast in a crisscross pattern, being careful not to cut into the meat.
- In a bowl, mix soy sauce, rice vinegar, ginger, garlic, and salt. Marinate the duck breasts in this mixture for at least 30 minutes.
- Prepare the smoking mixture by combining green tea leaves, jasmine rice, brown sugar, star anise, and a cinnamon stick in a small bowl.
- In a wok or a deep pot, place a steaming rack above the smoking mixture and bring it to medium heat.
- Once the smoking mixture begins to smoke, place the marinated duck breasts on the rack, skin side up, and cover with a lid.
- Smoke the duck for about 15-20 minutes for medium doneness. Remove from heat and let it rest for 10 minutes.
- Meanwhile, cook jasmine rice according to package instructions.
- Slice the smoked duck and serve it over a bed of jasmine rice, garnished with chopped spring onions and drizzled with sesame oil.
