  • Five-spice powder - 5g
  • Green tea leaves - 10g
  • Rice - 30g
  • Brown sugar - 10g
  • Salt - 5g
  • Pepper - 2g

Steps

  1. In a bowl, mix soy sauce, Shaoxing wine, five-spice powder, salt, and pepper. Marinate the duck breasts in this mixture for at least 1 hour in the refrigerator.
  2. In a separate bowl, combine green tea leaves, rice, and brown sugar to prepare the smoking mixture.
  3. Remove the duck from the marinade and pat dry with paper towels.
  4. Set up a stovetop smoker or a bamboo steamer lined with aluminum foil. Place the smoking mixture at the bottom.
  5. Place the duck breasts on the rack above the smoking mixture, skin side up.
  6. Cover the smoker or steamer tightly and heat over medium heat for about 30-40 minutes, allowing the smoke to infuse the duck.
