- Black tea leaves - 2 tablespoons
- Jasmine rice - 2 tablespoons (for smoking)
- Brown sugar - 1 teaspoon
- Soy sauce - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Lettuce leaves - 4 large (for wrapping)
- Cucumber - 50 grams, thinly sliced
- Carrot - 50 grams, thinly sliced
- Spring onion - 1, chopped
- Sesame oil - 1 teaspoon
- Rice vinegar - 1 teaspoon
- Salt - to taste
- Pepper - to taste
Steps
- In a bowl, marinate the chicken breast with soy sauce, garlic, ginger, salt, and pepper for at least 15 minutes.
- Prepare the smoking mixture by combining black tea leaves, jasmine rice, and brown sugar in a small bowl.
- Heat a wok or a deep skillet over medium heat. Once hot, add the smoking mixture, spread it evenly, and place a steaming rack or a heatproof plate on top.
- Place the marinated chicken breast on the rack or plate, cover with a lid, and smoke the chicken for about 15 minutes, ensuring the smoke can circulate.
- While the chicken is smoking, prepare the sauce by mixing sesame oil, rice vinegar, and a pinch of salt in a small bowl.
- Once the chicken is done smoking, remove it from the heat and let it rest for a few minutes before slicing it thinly.
- To assemble the burgers, place a few slices of smoked chicken on a lettuce leaf, top with cucumber, carrot, and spring onion, then drizzle with the prepared sauce.
- Wrap the lettuce around the fillings and serve immediately.
