Ingredients

  • Chicken breast - 250 grams
  • Black tea leaves - 2 tablespoons
  • Jasmine rice - 2 tablespoons (for smoking)
  • Brown sugar - 1 teaspoon
  • Soy sauce - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Lettuce leaves - 4 large (for wrapping)
  • Cucumber - 50 grams, thinly sliced
  • Carrot - 50 grams, thinly sliced
  • Spring onion - 1, chopped
  • Sesame oil - 1 teaspoon
  • Rice vinegar - 1 teaspoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. In a bowl, marinate the chicken breast with soy sauce, garlic, ginger, salt, and pepper for at least 15 minutes.
  2. Prepare the smoking mixture by combining black tea leaves, jasmine rice, and brown sugar in a small bowl.
  3. Heat a wok or a deep skillet over medium heat. Once hot, add the smoking mixture, spread it evenly, and place a steaming rack or a heatproof plate on top.
  4. Place the marinated chicken breast on the rack or plate, cover with a lid, and smoke the chicken for about 15 minutes, ensuring the smoke can circulate.
  5. While the chicken is smoking, prepare the sauce by mixing sesame oil, rice vinegar, and a pinch of salt in a small bowl.
  6. Once the chicken is done smoking, remove it from the heat and let it rest for a few minutes before slicing it thinly.
  7. To assemble the burgers, place a few slices of smoked chicken on a lettuce leaf, top with cucumber, carrot, and spring onion, then drizzle with the prepared sauce.
  8. Wrap the lettuce around the fillings and serve immediately.
