Steps
- Peel and cube the taro, then steam it for about 20 minutes until tender.
- Mash the steamed taro in a bowl until smooth and set aside to cool.
- In another bowl, combine the rice flour, tapioca starch, baking powder, sugar, and salt.
- Add the coconut milk and water to the dry ingredients, mixing well until a smooth batter forms.
- Fold in the mashed taro until evenly incorporated.
- Pour the mixture into a greased 8-inch round cake pan, smoothing the top with a spatula.
- Steam the cake over medium heat for 30-35 minutes, or until a toothpick inserted comes out clean.
