Steps
- Rinse the tapioca pearls under cold water to remove excess starch.
- In a medium saucepan, bring 300 milliliters of water to a boil.
- Add the rinsed tapioca pearls to the boiling water and reduce the heat to low.
- Cook the tapioca pearls for about 15 minutes, stirring occasionally, until they become translucent.
- Remove the saucepan from heat and let the tapioca pearls sit for 10 minutes to soften further.
- In a separate saucepan, combine the coconut milk, sugar, vanilla extract, and a pinch of salt. Heat over low heat until the sugar is dissolved, but do not boil.
- Drain the tapioca pearls and add them to the coconut milk mixture, stirring to combine.
