Ingredients

  • Coconut milk - 200 milliliters
  • Water - 300 milliliters
  • Sugar - 40 grams
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch
  • Mango (diced) - 100 grams (optional, for garnish)

Steps

  1. Rinse the tapioca pearls under cold water to remove excess starch.
  2. In a medium saucepan, bring 300 milliliters of water to a boil.
  3. Add the rinsed tapioca pearls to the boiling water and reduce the heat to low.
  4. Cook the tapioca pearls for about 15 minutes, stirring occasionally, until they become translucent.
  5. Remove the saucepan from heat and let the tapioca pearls sit for 10 minutes to soften further.
  6. In a separate saucepan, combine the coconut milk, sugar, vanilla extract, and a pinch of salt. Heat over low heat until the sugar is dissolved, but do not boil.
  7. Drain the tapioca pearls and add them to the coconut milk mixture, stirring to combine.
  8. Cook the mixture over low heat for an additional 5 minutes, stirring frequently.
  9. Remove from heat and let cool slightly before serving.
  10. Serve warm or chilled, garnished with diced mango if desired.
