Ingredients

  • Tapioca starch - 100 grams
  • Water - 150 milliliters
  • Sugar - 30 grams
  • Salt - a pinch
  • Food coloring (optional) - a few drops

Steps

  1. In a medium saucepan, combine the water, sugar, and salt. Bring to a boil over medium heat.
  2. Once boiling, gradually add the tapioca starch, stirring continuously to prevent lumps from forming.
  3. Continue stirring until the mixture thickens and becomes a cohesive dough-like consistency (about 5 minutes).
  4. Remove from heat and let it cool slightly until it is safe to handle.
  5. Knead the dough for a few minutes until smooth. If desired, add food coloring to create visually appealing pearls.
  6. Pinch small amounts of dough and roll them into small balls (about 1 cm in diameter).
  7. Bring a pot of water to boil and gently drop the tapioca pearls into the boiling water.
  8. Cook for about 15 minutes, or until the pearls become translucent and chewy, stirring occasionally.
  9. Once cooked, remove the pearls and rinse them under cold water to stop the cooking process.
