Ingredients

  • Strawberries - 200 grams
  • Water - 150 ml
  • Granulated sugar - 200 grams
  • Glucose syrup - 50 grams
  • Lemon juice - 1 tablespoon
  • Skewers - 4 pieces

Steps

  1. Wash the strawberries thoroughly and pat them dry with a paper towel.
  2. Insert a skewer into the top of each strawberry, making sure it's secure.
  3. In a saucepan, combine water, granulated sugar, glucose syrup, and lemon juice.
  4. Heat the mixture over medium heat, stirring until the sugar dissolves.
  5. Increase the heat to high and bring the mixture to a boil without stirring.
  6. Cook the syrup until it reaches the hard crack stage (about 150°C or 302°F), which should take approximately 10-12 minutes.
  7. Remove the saucepan from heat and let it cool for a minute.
  8. Quickly dip each skewer with the strawberries into the hot syrup, ensuring they are fully coated.
  9. Place the coated strawberries on a baking sheet lined with parchment paper to cool and harden.
  10. Let the tanghulu sit for about 10 minutes before serving.
