- Strawberries - 200 grams
- Water - 150 ml
- Granulated sugar - 200 grams
- Glucose syrup - 50 grams
- Lemon juice - 1 tablespoon
- Skewers - 4 pieces
Steps
- Wash the strawberries thoroughly and pat them dry with a paper towel.
- Insert a skewer into the top of each strawberry, making sure it's secure.
- In a saucepan, combine water, granulated sugar, glucose syrup, and lemon juice.
- Heat the mixture over medium heat, stirring until the sugar dissolves.
- Increase the heat to high and bring the mixture to a boil without stirring.
- Cook the syrup until it reaches the hard crack stage (about 150°C or 302°F), which should take approximately 10-12 minutes.
- Remove the saucepan from heat and let it cool for a minute.
- Quickly dip each skewer with the strawberries into the hot syrup, ensuring they are fully coated.
- Place the coated strawberries on a baking sheet lined with parchment paper to cool and harden.
- Let the tanghulu sit for about 10 minutes before serving.
