- Jasmine rice - 1 cup (200g)
- Water - 1.5 cups (360ml)
- Scallions - 4 stalks, finely chopped
- Eggs - 2 large
- Soy sauce - 2 tablespoons (30ml)
- Sesame oil - 1 tablespoon (15ml)
- Chicken breast, cooked and shredded - 150g
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then drain.
- In a medium saucepan, combine the rinsed rice and 1.5 cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes or until the rice is cooked and water is absorbed.
- While the rice is cooking, heat a non-stick skillet over medium heat and add the sesame oil.
- In a bowl, whisk the eggs and pour them into the skillet. Scramble the eggs until fully cooked, then season with salt and black pepper. Remove from the skillet and set aside.
- In the same skillet, add the chopped scallions and sauté for 1-2 minutes until fragrant.
- Add the cooked chicken breast to the skillet and drizzle with soy sauce, stirring to combine. Cook for an additional 2-3 minutes until heated through.
- Once the rice is done, fluff it with a fork and combine it with the scallion and chicken mixture. Add the scrambled eggs and mix gently until evenly distributed.
- Serve warm, garnished with extra scallions if desired.
