Steps
- In a mixing bowl, combine the all-purpose flour and salt. Gradually add warm water, mixing until a dough forms.
- Knead the dough on a floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 15 minutes.
- In a separate bowl, whisk together the eggs, soy sauce, sesame oil, and ground black pepper. Stir in the chopped scallions.
- Divide the rested dough into 2 equal pieces. Roll each piece into a thin circle on a floured surface.
- Spread half of the scallion and egg mixture evenly over one circle of dough, leaving a small border around the edges.
- Place the second circle of dough on top and press down gently to seal. Repeat for the second pie.
- Heat cooking oil in a frying pan over medium heat. Fry each pie for about 5-7 minutes on each side until golden brown and crispy.
- Remove from the pan and drain on paper towels. Cut into wedges and serve warm.
