Ingredients

  • Boneless chicken thighs - 300 grams
  • Garlic powder - 1 teaspoon
  • Five spice powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • Egg - 1 large
  • Almond flour - 50 grams
  • Coconut oil - 2 tablespoons for frying
  • Butter lettuce leaves - 4 large
  • Fresh cilantro - a handful, chopped
  • Sliced red chili - to taste
  • Mayonnaise - 2 tablespoons
  • Soy sauce - 1 tablespoon

Steps

  1. Cut the boneless chicken thighs into bite-sized pieces and place them in a mixing bowl.
  2. Add garlic powder, five spice powder, salt, and black pepper to the chicken, mixing well to coat evenly.
  3. In a separate bowl, beat the egg and then add it to the seasoned chicken, mixing until well combined.
  4. Sprinkle the almond flour over the chicken mixture and stir until all pieces are coated.
  5. Heat coconut oil in a frying pan over medium heat. Once hot, add the coated chicken pieces in batches, frying until golden brown and cooked through, about 5-7 minutes per batch.
  6. Once cooked, remove the chicken from the pan and let it drain on paper towels to remove excess oil.
  7. Prepare the burgers by taking a butter lettuce leaf and placing a generous amount of popcorn chicken in the center.
  8. Top with chopped cilantro, sliced red chili, and a drizzle of mayonnaise and soy sauce.
  9. Fold the lettuce around the filling to create a wrap and serve immediately.
