Ingredients

  • Gluten-free all-purpose flour - 150 grams
  • Butter, unsalted - 50 grams, softened
  • Sugar - 30 grams
  • Egg - 1 large, divided
  • Cold water - 2 tablespoons
  • Pineapple jam - 100 grams
  • Coconut flakes - 20 grams
  • Salt - a pinch

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine the gluten-free all-purpose flour, softened butter, sugar, and a pinch of salt. Mix until crumbly.
  3. Add half of the beaten egg (reserve the other half for egg wash) and cold water to the flour mixture. Stir until a dough forms.
  4. Wrap the dough in plastic wrap and refrigerate for 15 minutes.
  5. While the dough is chilling, prepare the filling by mixing the pineapple jam and coconut flakes in a bowl.
  6. Remove the dough from the refrigerator and roll it out on a floured surface to about 5mm thick.
  7. Cut out two circles of dough, approximately 15cm in diameter.
  8. Place half of the pineapple filling on one side of each dough circle, leaving a border for sealing.
  9. Fold the dough over to create a semi-circle shape, pressing the edges to seal tightly.
  10. Use a fork to crimp the edges for a decorative touch and to ensure a good seal.
  11. Brush the tops of the pies with the reserved beaten egg.
  12. Place the pies on a baking sheet lined with parchment paper and bake for 20-25 minutes or until golden brown.
  13. Remove from the oven and let cool slightly before serving.
