- Gluten-free all-purpose flour - 150 grams
- Butter, unsalted - 50 grams, softened
- Sugar - 30 grams
- Egg - 1 large, divided
- Cold water - 2 tablespoons
- Pineapple jam - 100 grams
- Coconut flakes - 20 grams
- Salt - a pinch
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine the gluten-free all-purpose flour, softened butter, sugar, and a pinch of salt. Mix until crumbly.
- Add half of the beaten egg (reserve the other half for egg wash) and cold water to the flour mixture. Stir until a dough forms.
- Wrap the dough in plastic wrap and refrigerate for 15 minutes.
- While the dough is chilling, prepare the filling by mixing the pineapple jam and coconut flakes in a bowl.
- Remove the dough from the refrigerator and roll it out on a floured surface to about 5mm thick.
- Cut out two circles of dough, approximately 15cm in diameter.
- Place half of the pineapple filling on one side of each dough circle, leaving a border for sealing.
- Fold the dough over to create a semi-circle shape, pressing the edges to seal tightly.
- Use a fork to crimp the edges for a decorative touch and to ensure a good seal.
- Brush the tops of the pies with the reserved beaten egg.
- Place the pies on a baking sheet lined with parchment paper and bake for 20-25 minutes or until golden brown.
- Remove from the oven and let cool slightly before serving.
