- Pork shoulder - 300 grams
- Garlic - 3 cloves, minced
- Shallots - 2 tablespoons, finely chopped
- Cilantro - 2 tablespoons, chopped
- Sea salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Five-spice powder - 1/2 teaspoon
- Honey - 1 tablespoon
- Coconut aminos - 2 tablespoons
- Pork casings - 1 meter (optional, for stuffing)
Steps
- 1. Begin by finely chopping the pork shoulder into small pieces or grind it using a meat grinder.
- 2. In a large bowl, combine the ground pork with minced garlic, chopped shallots, cilantro, sea salt, black pepper, five-spice powder, honey, and coconut aminos.
- 3. Mix the ingredients thoroughly until well combined, and let the mixture marinate in the refrigerator for at least 30 minutes.
- 4. If using pork casings, rinse them thoroughly and soak in water for 30 minutes before using.
- 5. Stuff the sausage mixture into the casings if desired, twisting them into 10 cm links, or form into patties if not using casings.
- 6. Preheat a grill or grill pan over medium-high heat.
- 7. Grill the sausages for about 10-12 minutes, turning occasionally until they are cooked through and have a nice char.
- 8. Remove from the grill and let rest for a few minutes before serving.
