Ingredients

  • Pork shoulder - 300 grams
  • Garlic - 3 cloves, minced
  • Shallots - 2 tablespoons, finely chopped
  • Cilantro - 2 tablespoons, chopped
  • Sea salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Five-spice powder - 1/2 teaspoon
  • Honey - 1 tablespoon
  • Coconut aminos - 2 tablespoons
  • Pork casings - 1 meter (optional, for stuffing)

Steps

  1. 1. Begin by finely chopping the pork shoulder into small pieces or grind it using a meat grinder.
  2. 2. In a large bowl, combine the ground pork with minced garlic, chopped shallots, cilantro, sea salt, black pepper, five-spice powder, honey, and coconut aminos.
  3. 3. Mix the ingredients thoroughly until well combined, and let the mixture marinate in the refrigerator for at least 30 minutes.
  4. 4. If using pork casings, rinse them thoroughly and soak in water for 30 minutes before using.
  5. 5. Stuff the sausage mixture into the casings if desired, twisting them into 10 cm links, or form into patties if not using casings.
  6. 6. Preheat a grill or grill pan over medium-high heat.
  7. 7. Grill the sausages for about 10-12 minutes, turning occasionally until they are cooked through and have a nice char.
  8. 8. Remove from the grill and let rest for a few minutes before serving.
