Ingredients

  • Rice noodles - 150 grams
  • Szechuan peppercorns - 1 teaspoon
  • Garlic - 3 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Chili oil - 2 tablespoons
  • Soy sauce (gluten-free) - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Brown sugar - 1 teaspoon
  • Green onions - 2, chopped
  • Cilantro - 2 tablespoons, chopped
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Water - 1 liter

Steps

  1. Bring 1 liter of water to a boil in a medium saucepan. Add the rice noodles and cook according to the package instructions until al dente, usually about 4-6 minutes. Drain and rinse under cold water to stop the cooking process.
  2. In a small dry skillet, toast the Szechuan peppercorns over medium heat for 1-2 minutes until fragrant. Remove from heat and crush them lightly using a mortar and pestle or the back of a spoon.
  3. In a mixing bowl, combine the minced garlic, minced ginger, chili oil, soy sauce, rice vinegar, brown sugar, and crushed Szechuan peppercorns. Mix well to create the spicy sauce.
  4. In a large mixing bowl, combine the cooked rice noodles with the spicy sauce, tossing well to coat the noodles evenly.
  5. Add chopped green onions, cilantro, and sesame oil to the noodles. Toss again and season with salt to taste.
  6. Serve the Szechuan Style Spicy Noodles hot, garnished with additional green onions and cilantro if desired.
