Ingredients

  • White fish fillets (e.g., tilapia or cod) - 300 grams
  • Cornstarch - 3 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetable oil - 4 tablespoons
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Dried red chilies - 5-6 pieces (adjust for spice level)
  • Szechuan peppercorns - 1 teaspoon
  • Soy sauce (gluten-free) - 2 tablespoons
  • Chili bean paste - 1 tablespoon
  • Chicken broth - 100 ml
  • Green onions - 2, chopped
  • Fresh cilantro - a handful, chopped (for garnish)

Steps

  1. Pat the fish fillets dry with a paper towel and season both sides with salt and black pepper. Dust lightly with cornstarch, pressing it into the fish.
  2. Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat. Once hot, add the fish fillets and fry until golden brown and cooked through, about 3-4 minutes per side. Remove from the skillet and set aside.
  3. In the same skillet, add the remaining 2 tablespoons of oil. Add minced garlic, ginger, dried red chilies, and Szechuan peppercorns. Stir-fry for about 1 minute until fragrant.
  4. Add the chili bean paste and stir well for another minute. Then pour in the gluten-free soy sauce and chicken broth, stirring to combine.
  5. Bring the sauce to a simmer and let it cook for about 2-3 minutes to thicken slightly.
  6. Return the fish to the skillet, spooning the sauce over the fillets to coat them well. Cook for an additional 1-2 minutes to heat through.
  7. Garnish with chopped green onions and fresh cilantro before serving.
