Ingredients

  • Garlic - 3 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Soy sauce (gluten-free) - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Honey - 1 tablespoon
  • Cornstarch - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Green onions - 2, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Vegetable oil - for frying

Steps

  1. In a small pan, dry roast the Szechuan peppercorns and dried red chilies over medium heat for 2-3 minutes until fragrant. Allow to cool and then grind into a coarse powder.
  2. In a large bowl, combine the minced garlic, ginger, ground Szechuan peppercorns, red chili powder, soy sauce, rice vinegar, honey, sesame oil, salt, and black pepper to make a marinade.
  3. Add the chicken wings to the marinade, tossing to coat evenly. Cover and refrigerate for at least 30 minutes or up to 2 hours for deeper flavor.
  4. After marinating, remove the wings and sprinkle them with cornstarch, ensuring an even coating.
  5. Heat vegetable oil in a deep pan or fryer to 180°C (350°F). Carefully add the wings in batches and fry for 8-10 minutes until golden brown and crispy.
