Steps

- 7. Combine the shrimp and eggplant, then add soy sauce, chili bean paste, rice vinegar, and sugar. Stir well to coat everything evenly.
- 8. Cook for an additional 2-3 minutes until the sauce thickens slightly and the eggplant is tender.
- 9. Season with salt to taste and drizzle with sesame oil.
- 10. Remove from heat, garnish with chopped green onions, and serve hot with steamed rice.
