  • Spring onions - 2, chopped for garnish

Steps

  1. Peel the potatoes and cut them into thin strips, about 1/4 inch thick.
  2. Soak the potato strips in cold water for 10 minutes to remove excess starch, then drain and pat dry with a kitchen towel.
  3. Heat the vegetable oil in a wok or large frying pan over medium-high heat.

  8. Add soy sauce, vinegar, sugar, and salt to taste, then toss everything together for another 2-3 minutes until the potatoes are well coated.
