  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Szechuan peppercorns - 1 teaspoon
  • Soy sauce - 2 tablespoons
  • Chili paste - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Brown sugar - 1 teaspoon
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Spring onions - 2, chopped for garnish
  • Salt - to taste

Steps

  1. In a bowl, marinate the sliced pork with soy sauce, chili paste, rice vinegar, brown sugar, and a pinch of salt. Let it sit for at least 15 minutes.
  2. Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat. Add Szechuan peppercorns and stir-fry for about 30 seconds until fragrant.
  3. Add the marinated pork to the pan and stir-fry for 5-7 minutes until the pork is cooked through and slightly caramelized. Remove from the pan and set aside.
  4. In the same pan, add the remaining tablespoon of vegetable oil and toss in the minced garlic and ginger. Stir-fry for 30 seconds until aromatic.
  5. Add the sliced bell pepper, zucchini, and carrot to the pan. Stir-fry for 5 minutes until the vegetables are tender-crisp.
  6. Return the cooked pork to the pan and mix everything together. Drizzle with sesame oil and adjust seasoning with salt if needed.
