- Carrot - 1 medium, julienned

- Szechuan peppercorns - 1 teaspoon
- Soy sauce - 2 tablespoons
- Chili paste - 1 tablespoon
- Rice vinegar - 1 tablespoon
- Brown sugar - 1 teaspoon
- Sesame oil - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Spring onions - 2, chopped for garnish
- Salt - to taste
Steps
- In a bowl, marinate the sliced pork with soy sauce, chili paste, rice vinegar, brown sugar, and a pinch of salt. Let it sit for at least 15 minutes.
- Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat. Add Szechuan peppercorns and stir-fry for about 30 seconds until fragrant.
- Add the marinated pork to the pan and stir-fry for 5-7 minutes until the pork is cooked through and slightly caramelized. Remove from the pan and set aside.
- In the same pan, add the remaining tablespoon of vegetable oil and toss in the minced garlic and ginger. Stir-fry for 30 seconds until aromatic.
- Add the sliced bell pepper, zucchini, and carrot to the pan. Stir-fry for 5 minutes until the vegetables are tender-crisp.
- Return the cooked pork to the pan and mix everything together. Drizzle with sesame oil and adjust seasoning with salt if needed.
- Stir-fry for an additional 2 minutes to combine flavors.
- Serve hot, garnished with chopped spring onions.
