- Szechuan noodles - 200 grams
- Vegetable oil - 2 tablespoons
- Garlic, minced - 3 cloves
- Ginger, grated - 1 tablespoon
- Szechuan peppercorns - 1 teaspoon
- Red chili flakes - 1 teaspoon
- Soy sauce (halal) - 3 tablespoons
- Chili oil - 1 tablespoon
- Sugar - 1 teaspoon
- Green onions, chopped - 2 stalks
- Bell pepper, thinly sliced - 1 medium
- Carrot, julienned - 1 medium
- Cilantro, chopped - 2 tablespoons
Steps
- Boil a pot of water and cook the Szechuan noodles according to package instructions. Drain and set aside.
- In a large pan or wok, heat the vegetable oil over medium heat. Add the minced garlic and grated ginger, sautéing until fragrant, about 1 minute.
- Add the Szechuan peppercorns and red chili flakes to the pan, stirring for another 30 seconds.
- In a small bowl, mix the soy sauce, chili oil, and sugar. Pour this mixture into the pan and stir well.
- Add the sliced bell pepper and julienned carrot to the pan, cooking for 3-4 minutes until they start to soften.
- Add the cooked noodles to the pan, tossing everything together to coat the noodles evenly with the sauce and vegetables. Cook for an additional 2 minutes.
- Garnish with chopped green onions and cilantro before serving.
