  • Szechuan noodles - 200 grams
  • Vegetable oil - 2 tablespoons
  • Garlic, minced - 3 cloves
  • Ginger, grated - 1 tablespoon
  • Szechuan peppercorns - 1 teaspoon
  • Red chili flakes - 1 teaspoon
  • Soy sauce (halal) - 3 tablespoons
  • Chili oil - 1 tablespoon
  • Sugar - 1 teaspoon
  • Green onions, chopped - 2 stalks
  • Bell pepper, thinly sliced - 1 medium
  • Carrot, julienned - 1 medium
  • Cilantro, chopped - 2 tablespoons

Steps

  1. Boil a pot of water and cook the Szechuan noodles according to package instructions. Drain and set aside.
  2. In a large pan or wok, heat the vegetable oil over medium heat. Add the minced garlic and grated ginger, sautéing until fragrant, about 1 minute.
  3. Add the Szechuan peppercorns and red chili flakes to the pan, stirring for another 30 seconds.
  4. In a small bowl, mix the soy sauce, chili oil, and sugar. Pour this mixture into the pan and stir well.
  5. Add the sliced bell pepper and julienned carrot to the pan, cooking for 3-4 minutes until they start to soften.
  6. Add the cooked noodles to the pan, tossing everything together to coat the noodles evenly with the sauce and vegetables. Cook for an additional 2 minutes.
  7. Garnish with chopped green onions and cilantro before serving.
