  • Szechuan peppercorns - 1 teaspoon
  • Chili flakes - 1 teaspoon
  • Garlic, minced - 2 cloves
  • Ginger, minced - 1 teaspoon
  • Soy sauce - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Honey - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Green onions, chopped - 2 for garnish
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a dry skillet over medium heat, toast the Szechuan peppercorns for about 2-3 minutes until fragrant. Remove from heat and crush them slightly.
  2. In a mixing bowl, combine the crushed Szechuan peppercorns, chili flakes, minced garlic, minced ginger, soy sauce, rice vinegar, honey, sesame oil, salt, and black pepper to create the marinade.
  3. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours for better flavor.
  4. Preheat your grill to medium-high heat. Remove the chicken from the marinade and let any excess drip off.
  5. Grill the chicken thighs for about 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 75°C (165°F).
  6. Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing.
  7. Serve the grilled chicken topped with chopped green onions and enjoy!
