- Szechuan peppercorns - 1 teaspoon
- Chili flakes - 1 teaspoon
- Garlic, minced - 2 cloves
- Ginger, minced - 1 teaspoon
- Soy sauce - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Honey - 1 tablespoon
- Sesame oil - 1 tablespoon
- Green onions, chopped - 2 for garnish
- Salt - to taste
- Black pepper - to taste
Steps
- In a dry skillet over medium heat, toast the Szechuan peppercorns for about 2-3 minutes until fragrant. Remove from heat and crush them slightly.
- In a mixing bowl, combine the crushed Szechuan peppercorns, chili flakes, minced garlic, minced ginger, soy sauce, rice vinegar, honey, sesame oil, salt, and black pepper to create the marinade.
- Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours for better flavor.
- Preheat your grill to medium-high heat. Remove the chicken from the marinade and let any excess drip off.
- Grill the chicken thighs for about 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 75°C (165°F).
- Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing.
- Serve the grilled chicken topped with chopped green onions and enjoy!
