  • Green onion - 2 stalks, chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 inch, minced
  • Szechuan peppercorns - 1 teaspoon
  • Soy sauce - 2 tablespoons
  • Chili paste - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Water - 1 liter (for boiling noodles)

Steps

  1. Boil 1 liter of water in a pot and cook the egg noodles according to the package instructions. Drain and set aside.
  2. In a large frying pan or wok, heat 2 tablespoons of vegetable oil over medium-high heat.
  3. Add the sliced chicken and cook for about 5-7 minutes until browned and cooked through. Remove from the pan and set aside.
  4. In the same pan, add the minced garlic, ginger, and Szechuan peppercorns, stirring for about 30 seconds until fragrant.
  5. Add the sliced bell pepper and julienned carrot to the pan, stir-frying for 3-4 minutes until just tender.
  6. Return the chicken to the pan along with the cooked noodles.
  7. Pour in the soy sauce, chili paste, and sesame oil. Toss everything together to combine thoroughly, cooking for an additional 2-3 minutes.
  8. Season with salt and black pepper to taste, and add the chopped green onions just before serving.
