- Egg noodles - 150 grams

- Carrot - 1 medium, julienned
- Green onion - 2 stalks, chopped
- Garlic - 3 cloves, minced
- Ginger - 1 inch, minced
- Szechuan peppercorns - 1 teaspoon
- Soy sauce - 2 tablespoons
- Chili paste - 1 tablespoon
- Sesame oil - 1 tablespoon

- Water - 1 liter (for boiling noodles)
Steps
- Boil 1 liter of water in a pot and cook the egg noodles according to the package instructions. Drain and set aside.
- In a large frying pan or wok, heat 2 tablespoons of vegetable oil over medium-high heat.
- Add the sliced chicken and cook for about 5-7 minutes until browned and cooked through. Remove from the pan and set aside.
- In the same pan, add the minced garlic, ginger, and Szechuan peppercorns, stirring for about 30 seconds until fragrant.
- Add the sliced bell pepper and julienned carrot to the pan, stir-frying for 3-4 minutes until just tender.
- Return the chicken to the pan along with the cooked noodles.
- Pour in the soy sauce, chili paste, and sesame oil. Toss everything together to combine thoroughly, cooking for an additional 2-3 minutes.
- Season with salt and black pepper to taste, and add the chopped green onions just before serving.
