Ingredients

  • Beef sirloin - 200 grams, thinly sliced
  • Egg noodles - 150 grams
  • Bell pepper - 1 medium, sliced (red or green)
  • Carrot - 1 medium, julienned
  • Green onion - 2 stalks, chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Szechuan peppercorns - 1 teaspoon, crushed
  • Soy sauce - 2 tablespoons
  • Chili paste - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Cook the egg noodles according to the package instructions, then drain and set aside.
  2. In a large bowl, marinate the sliced beef with soy sauce, black pepper, and a pinch of salt for about 10 minutes.
  3. Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat. Add the marinated beef and stir-fry until browned, about 3-4 minutes. Remove the beef and set aside.
  4. In the same wok, add the remaining vegetable oil. Sauté the minced garlic and grated ginger for about 30 seconds until fragrant.
  5. Add the sliced bell pepper and julienned carrot to the wok, stir-frying for 3-4 minutes until they start to soften.
  6. Return the beef to the wok, along with the cooked noodles, Szechuan peppercorns, chili paste, and sesame oil. Toss everything together and stir-fry for another 2-3 minutes until heated through.
  7. Garnish with chopped green onions before serving. Adjust seasoning with salt or additional soy sauce, if desired.
