- Beef sirloin - 200 grams, thinly sliced
- Egg noodles - 150 grams
- Bell pepper - 1 medium, sliced (red or green)
- Carrot - 1 medium, julienned
- Green onion - 2 stalks, chopped
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, grated
- Szechuan peppercorns - 1 teaspoon, crushed
- Soy sauce - 2 tablespoons
- Chili paste - 1 tablespoon
- Sesame oil - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
Steps
- Cook the egg noodles according to the package instructions, then drain and set aside.
- In a large bowl, marinate the sliced beef with soy sauce, black pepper, and a pinch of salt for about 10 minutes.
- Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat. Add the marinated beef and stir-fry until browned, about 3-4 minutes. Remove the beef and set aside.
- In the same wok, add the remaining vegetable oil. Sauté the minced garlic and grated ginger for about 30 seconds until fragrant.
- Add the sliced bell pepper and julienned carrot to the wok, stir-frying for 3-4 minutes until they start to soften.
- Return the beef to the wok, along with the cooked noodles, Szechuan peppercorns, chili paste, and sesame oil. Toss everything together and stir-fry for another 2-3 minutes until heated through.
- Garnish with chopped green onions before serving. Adjust seasoning with salt or additional soy sauce, if desired.
