Steps
- In a mixing bowl, combine ground chicken, chopped scallions, minced garlic, minced ginger, soy sauce, sesame oil, cornstarch, ground Szechuan peppercorns, and a pinch of salt. Mix thoroughly until well combined.
- Lay a wonton wrapper on a clean surface and place about 1 teaspoon of the filling in the center. Moisten the edges of the wrapper with water, fold it in half to create a triangle, and press to seal. Then, bring the two corners of the triangle together and pinch to form a wonton shape. Repeat with remaining wrappers and filling.
- Bring a large pot of water to a gentle boil. Carefully add the wontons and cook for about 4-5 minutes or until they float to the surface and are cooked through. Remove with a slotted spoon and drain.
- In a small bowl, whisk together chili oil, rice vinegar, chili paste, and sugar to create the dipping sauce.
