Ingredients

  • Pork ribs - 500 grams
  • Szechuan peppercorns - 1 teaspoon
  • Chili flakes - 1 teaspoon
  • Garlic - 3 cloves, minced
  • Ginger - 1 inch, grated
  • Soy sauce - 2 tablespoons
  • Honey - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Green onions - 2, chopped (for garnish)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 150°C (300°F).
  2. In a dry skillet, toast the Szechuan peppercorns over medium heat for 2-3 minutes until fragrant, then crush them in a mortar and pestle.
  3. In a bowl, mix the crushed Szechuan peppercorns, chili flakes, minced garlic, grated ginger, soy sauce, honey, rice vinegar, sesame oil, salt, and black pepper to create a marinade.
  4. Place the pork ribs in a large resealable bag or shallow dish and pour the marinade over them, ensuring they are well coated. Seal or cover and marinate in the refrigerator for at least 1 hour, preferably overnight.
  5. Remove the ribs from the marinade and place them on a baking sheet lined with parchment paper. Reserve the marinade for basting.
  6. Cover the ribs with aluminum foil and bake in the preheated oven for 1 hour.
  7. After 1 hour, remove the foil, baste the ribs with the reserved marinade, and increase the oven temperature to 200°C (400°F). Bake for an additional 20-30 minutes, basting every 10 minutes, until the ribs are caramelized and tender.
  8. Once done, remove the ribs from the oven and let them rest for 5 minutes. Slice and serve garnished with chopped green onions.
