  • Szechuan peppercorns - 1 teaspoon
  • Dried red chilies - 3-4
  • Soy sauce (kosher) - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Sugar - 1 teaspoon
  • Cornstarch - 1 tablespoon
  • Green onions (sliced) - 2 stalks
  • Sesame oil - 1 teaspoon
  • Salt - to taste

Steps

  1. In a bowl, combine the prawns with cornstarch and a pinch of salt. Set aside for 10 minutes.
  2. Heat the vegetable oil in a large pan or wok over medium-high heat.
  3. Add the minced garlic, ginger, Szechuan peppercorns, and dried red chilies to the pan, stirring for about 30 seconds until fragrant.
  4. Increase the heat to high and add the prawns, cooking for about 3-4 minutes until they turn pink and opaque.
  5. In a small bowl, mix together the soy sauce, rice vinegar, and sugar, then pour it over the prawns in the pan.
  6. Stir well to coat the prawns in the sauce and allow it to simmer for another 2 minutes.
  7. Remove from heat and drizzle with sesame oil, then toss in the sliced green onions.
  8. Serve hot with steamed rice or noodles.
