- Szechuan peppercorns - 1 teaspoon
- Dried red chilies - 3-4
- Soy sauce (kosher) - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Sugar - 1 teaspoon
- Cornstarch - 1 tablespoon
- Green onions (sliced) - 2 stalks
- Sesame oil - 1 teaspoon
- Salt - to taste
Steps
- In a bowl, combine the prawns with cornstarch and a pinch of salt. Set aside for 10 minutes.
- Heat the vegetable oil in a large pan or wok over medium-high heat.
- Add the minced garlic, ginger, Szechuan peppercorns, and dried red chilies to the pan, stirring for about 30 seconds until fragrant.
- Increase the heat to high and add the prawns, cooking for about 3-4 minutes until they turn pink and opaque.
- In a small bowl, mix together the soy sauce, rice vinegar, and sugar, then pour it over the prawns in the pan.
- Stir well to coat the prawns in the sauce and allow it to simmer for another 2 minutes.
- Remove from heat and drizzle with sesame oil, then toss in the sliced green onions.
- Serve hot with steamed rice or noodles.
