  • Red bell pepper, diced - 1/2 cup
  • Mushrooms, sliced - 1/2 cup
  • Zucchini, diced - 1/2 cup

  • Szechuan chili sauce - 3 tablespoons
  • Soy sauce (or tamari) - 1 tablespoon
  • Cilantro, chopped - 2 tablespoons

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a dry pan over medium heat, toast the Szechuan peppercorns for 2-3 minutes until fragrant. Crush them lightly using a mortar and pestle or a rolling pin.
  3. In a skillet, heat the vegetable oil over medium heat. Add the minced garlic and ginger, sautéing for about 30 seconds until fragrant.
  4. Add the diced red bell pepper, mushrooms, and zucchini to the skillet. Cook for 5-7 minutes until softened.
  5. Stir in the crushed Szechuan peppercorns, Szechuan chili sauce, and soy sauce. Cook for an additional 2-3 minutes, allowing the flavors to meld.
  6. Remove the skillet from heat and stir in the chopped green onions and cilantro.
  7. Spread the spicy vegetable mixture evenly over the gluten-free pizza crust.
  8. Bake in the preheated oven for 10-12 minutes until the crust is crispy.
  9. Once baked, remove the pie from the oven and sprinkle with sesame seeds before slicing and serving.
